HotBox are a true modern smokehouse, taking inspiration from ancient cooking techniques to create exciting and vibrant plates of food. Our journey started trading at street food markets in East London as part of Street Feast/London Union, with residencies including the famous Dalston Yard, Battersea Power Station, Model Market as well as Hawker House.
They use a combination of kiln-dried Hickory and Oak in their 1-tonne Rotisserie Smoker. The meat is dry-rubbed and cooked low and slow(ly) to create tender, succulent cuts that melt in the mouth. Be careful though, there’s plenty of spice to get those taste buds fired up.
