Porridge is one of our favourite ways to start the day. But it doesn’t have to be beige. This recipe for overnight oats really packs a purple triple whammy of flavour, colour and goodness.

INGREDIENTS
- 100g oats
- 250ml coconut milk drink
- 1/2 tsp cinnamon
- 1 tsp vanilla essence/powder
- 1 tbsp maple syrup (optional)
- 2 tsp Haspaka berry powder
- 2 tbsp coconut yogurt
- 20g coconut flakes
- Extra milk to loosen oats (if needed)
METHOD FOR THE OATS
- Add the oats, milk and spices and maple to a tub and mix to combine and cover.
- Pop in the fridge overnight.
METHOD FOR THE TOASTED COCONUT
- Add the coconut flakes to a saucepan, heat on medium until lightly toasted then set aside.
METHOD FOR THE COMBINATION
- In the morning: Stir the Haskapa berry powder into oats then top with the coconut flakes, coconut yogurt and a little more coconut drink if needed.
