Porridge is one of our favourite ways to start the day. But it doesn’t have to be beige. This recipe for overnight oats really packs a purple triple whammy of flavour, colour and goodness.

NEED TO KNOW

INGREDIENTS
  • 100g oats
  • 250ml coconut milk drink
  • 1/2 tsp cinnamon
  • 1 tsp vanilla essence/powder
  • 1 tbsp maple syrup (optional)
  • 2 tsp Haspaka berry powder
  • 2 tbsp coconut yogurt
  • 20g coconut flakes
  • Extra milk to loosen oats (if needed)
METHOD FOR THE OATS
  1. Add the oats, milk and spices and maple to a tub and mix to combine and cover.
  2. Pop in the fridge overnight.
METHOD FOR THE TOASTED COCONUT
  1. Add the coconut flakes to a saucepan, heat on medium until lightly toasted then set aside.
METHOD FOR THE COMBINATION
  1. In the morning: Stir the Haskapa berry powder into oats then top with the coconut flakes, coconut yogurt and a little more coconut drink if needed.
