We caught up with Fezile Ozalgan, Head Chef at Barboun…check out what she told us!

What is your favourite dish on your own menu and why?
Favourite dish is the Sun-dried Aubergine Dolma, a very tasty and authentic Turkish dish that holds personal value to me, a dish my mother and grandmother had introduced to me from a young age. The Barboun interpretation of this classic is mouthwateringly tasty!

What is your desert island dish?
Tahini fondant

What is your favourite seasonal dish?
Smoked Celeriac

What drink would you pair with it?
Okuzgozu Grape Wine from Turkey

What is your favourite restaurant in London and why?
St Johns. The menus are always full of great flavour using great products! I’m also a very big fan of offal.

What is your favourite dish in London and why?
My Favourite dish was (and still holds the number one spot for me) the Marmite Royale from Club Gascon

Who is your most hotly tipped young chef?
Antoni Mateo. My Chef that has worked with me for some years, starting as KP and working his way up to one of my most reliable and hard-working chefs, eager to learn!

What is your favourite thing about Taste?
The opportunity to taste all that London’s best has to offer!
