We caught up with Jay Morjaria, head chef at JAE…check out what he told us!
What is your favourite dish on your own menu and why?
Our kimchi and Cornish Gouda stuffed pancake. It’s everything I love in one dish – spicy, umami and handheld.
What is your desert island dish?
A good bowl of Dan Dan noodles.
What is your favourite seasonal dish?
Anything with British tomatoes. We dress ours with a spicy yuzu dressing and serve them with whipped London feta and nori seaweed.
What drink would you pair with it?
A cold glass of Pet Nat.
What is your favourite restaurant in London and why?
Native. Their food is well thought out, innovative and impeccably sourced. All served in a relaxed and non stuffy setting.
What is your favourite London pub and why?
So many to choose from but for different reasons, The French House and The Marksman.
Who is your most hotly tipped young chef?
Ferdinand “Budge” Montoya of Filipino BBQ pop up, Sarap. His food is bold and full of flavour.
What is your favourite thing about Taste?
Being able to try so many dishes in one place.
