During Covid lockdown, what started as a personal passion for cooking and an obsession with authentic Mexican flavours quickly became something much bigger. Experimenting in the kitchen, perfecting the slow-braise, nailing the consommé — it became clear that London was missing something. Authentic, genuine, soul-warming Mexican street food done the right way. That realisation turned a passion into a mission, and Birria Taco was born.

The team at Birria Taco saw a real gap in the market. Mexican cuisine in the UK has long been reduced to fast-food imitations and watered-down flavours. Birria Taco exists to change that — bringing the real thing to the people, straight from the heart of Mexican culinary tradition to the streets of London.

At their Taste of London stand, guests will experience tender, slow-braised beef steeped in a rich blend of dried chillies, aromatic spices, and deep smoky consommé, piled into corn tortillas and crisped to perfection on the griddle. Every order comes with their signature consommé broth for the full dipping experience — messy, indulgent, and utterly unforgettable.

Finished with fresh white onion, coriander, lime, and house salsa, every Birria Taco is a bold, authentic bite unlike anything else at the festival. This is more than a taco.
