We caught up with James Cochran, head chef at 12:51…check out what he told us!

What is your favourite dish on your own menu and why?
It’s the buttermilk fried chicken dish with scotch bonnet jam, corn nuts and coriander. For me you can’t beat comfort food and any time of the day I can eat it.

What is your desert island dish?
Roast dinner

What is your favourite seasonal dish?
I think spring/ summer is my favourite season and my seasonal dish has to be fresh crab, katsu curry, apple, buttermilk it just speaks volumes of fresh seasonal produce.

What drink would you pair with it?
Negroni

What is your favourite restaurant in London and why?
Cannot say, it’s to hard to decide but I tend to go cheap and cheerful so probably at the moment it would be Mr. Bao in Peckham.

What is your favourite London pub and why?
Hermits cave in Camberwell Green!!! Proper boozer and the beer is cheap.

What is your favourite thing about Taste?
The array of different cuisines and the buzz at taste is something quiet unique.
