Steven will be hosting a range of masterclasses in fermentation, pickling & preservation and smoking. You'll get to:
- Make labneh, cultured butter, kefir & kombucha after unearthing the basics of fermentation
- Pickle and preserve a range of exciting foods including honey fermented jam, sauerkraut, fresh chorizo and bacon
- Prepare hot smoked mackerel pâté and learn the principles of cold smoking too

You'll get to taste 7 different island bars made using rare single-estate cocoa from the Pacific Ring of Fire countries, Philippines and Madagascar.
