Som Tum (Papaya Salad)

Addictively hot and refreshingly crunchy, this Thai staple has been called the world’s best salad...
  1. Crush garlic and chilli in the pestle and mortor
  2. One by one add green beans, dried shrimp, palm sugar, fish sauce, lime juice and crush/mix all ingredients
  3. Then continue to add cherry tomatoes, papaya and carrots and gently crush
  4. Lastly, add the peanuts and gently crush and mix with a spoon until all ingredients are evenly distributed. Serve with some green leaves.

  • 2 tbsp dried shrimp
  • 3 tbsp peanuts
  • 2 garlic cloves
  • 2-6 whole bird’s eye chillis, depending on degree of bravery
  • 12 French beans, cut into 1cm lengths
  • 10 cherry tomatoes, halved
  • 1 lime cut into wedges, plus 3 tbsp lime juice
  • 150g green papaya- shredded
  • 150g carrot - shredded
  • 1 tbsp tamarind water
  • 2 tbsp fish sauce
  • 3 tbsp shaved palm sugar
