Som Tum (Papaya Salad)
Addictively hot and refreshingly crunchy, this Thai staple has been called the world’s best salad...
- Crush garlic and chilli in the pestle and mortor
- One by one add green beans, dried shrimp, palm sugar, fish sauce, lime juice and crush/mix all ingredients
- Then continue to add cherry tomatoes, papaya and carrots and gently crush
- Lastly, add the peanuts and gently crush and mix with a spoon until all ingredients are evenly distributed. Serve with some green leaves.

- 2 tbsp dried shrimp
- 3 tbsp peanuts
- 2 garlic cloves
- 2-6 whole bird’s eye chillis, depending on degree of bravery
- 12 French beans, cut into 1cm lengths
- 10 cherry tomatoes, halved
- 1 lime cut into wedges, plus 3 tbsp lime juice
- 150g green papaya- shredded
- 150g carrot - shredded
- 1 tbsp tamarind water
- 2 tbsp fish sauce
- 3 tbsp shaved palm sugar
