Pork rolls with Aquavit mustard

For the pork roll:

  • 5kg sausage meat
  • Zest of 1 orange
  • ½ bunch of marjoram
  • 6 brunoise shallots
  • 1 pinch curry powder
  • 1l whipping cream
  • Salt and pepper
For the Aquavit mustard:
  • 200ml mustard powder
  • 200ml whipping cream
  • 200ml sugar
  • 2 whole eggs
  • Salt
For serving:
  • Peas shoots
  • 200ml Aquavit

This simple recipe by Aster is a delicious Nordic twist on the classic sausage roll and is the ideal snack for summer garden parties and picnics.

1. First, make the sausages for the pork rolls. Combine all the ingredients together and add to a piping bag. Pipe a long thin roll of sausage mix along a sheet of baking paper and transfer to the freezer.

2. Once frozen, wrap the sausage in thinly sliced pancetta and puff pastry. Heat an oven to 180 degrees and cook the pork rolls for 10-15ml until the pastry is golden and risen. Cut each tube of sausage roll into 4 individual servings.

3. Next, prepare the Aquavit mustard. Mix all of the ingredients in a bowl and whisk over a low heat on the stove until combined. When the sauce is coming together nicely, remove from the heat and leave to cool for 10 minutes. Once cool, stir in 200ml of Aquavit and serve.
