Cranberry and brie tartlets

  • 225g shortcrust pastry
  • 1/2 jar Tracklements cranberry, port & orange sauce
  • 200g brie, cut into 1/2 inch cubes (rind left on)
  • Fresh thyme to garnish

Wow your friends and family with this crowd-pleasing canapé recipe from Tracklements that are best enjoyed around the fire with a hearty glass of red.

1. Roll the pastry out until it is 3mm thick and stamp out circles to fit in a tartlet tin and chill for 30 minutes.

2. Pre-heat the oven to 180 degrees and bake the pastry cases blind for 10 minutes.

3. Remove from the oven and place 1 teaspoon of cranberry, port and orange sauce in each pastry case and top with two cubes of brie.

4. Bake for approximately 10 – 15 minutes until raised and golden brown. Top with a sprig of fresh thyme and serve
