Ingredients

  • 60ml Seedlip Spice
  • 20ml raspberry shrub
  • Lemon twist for garnish
For the shrub:
  • 1 punnet raspberries
  • 1 cup apple cider vinegar
  • 1 cup white sugar

This non-alcoholic cocktail recipe by Seedlip Drinks is inspired by the 17th Century colony who created the original raspberry shrub and has a deliciously tart, herbaceous flavour profile. Perfect for after dinner drinks!

1. First, prepare the raspberry shrub. Add all the ingredients into a jar and muddle with a large spoon. Leave to steep overnight and strain the following day.

2. Next, add the Seedlip and strained shrub to a mixing glass filled with ice. Stir to blend and strain into a coupe glass.

3. Prepare the lemon twist garnish by thinly slicing a rectangle of rind from a lemon, being careful to remove as little of the pith as possible.

4. Just before serving, gently squeeze the lemon twist across the top of the glass to scatter the oils across the cocktail. Add the twist to the glass and serve.
