Carne asada tacos

Ingredients

  • 2 Lean Steaks of your choice
  • 4 Tortillas (we like blue corn for this recipe) gently reheated and kept warm
Marinade, Mojo, and Pickled Onions
  • Orange Juice
  • Olive Oil
  • Light Soy
  • Lager
  • Worcestershire
  • Chipotles in Adobo
  • Garlic
  • Ground Cumin
  • Chili Powder
  • Black Pepper
  • Coriander
  • Fresh Red Chilli
  • Green Pepper
  • Red Onion
  • White Wine Vinegar
  • Salt
  • Sugar
Garnishes to dress the dish
  • Chopped fresh chillis
  • Coriander
  • Shredded lettuce
  • Slices of avocado or guacamole
  • Grilled spring onions
  • Hot sauce
  • Wedges of lime

1. Prepare the steak marinade – ideally, let your steaks marinate at least overnight

2. Marinate the pickled onions overnight, they should come out a vibrant pink and still have bite

3. Season & grill the steaks to your cooking preference, slice thinly against the grain

4. Spoon the Mojo over the meat and place inside reheated tortillas- top with pickled onions

5. Top with your choice of garnishes – we use them all!

 

To make the marinade, combine the following ingredients to your taste and blend in a food processor

  • Orange Juice
  • Olive Oil
  • Light Soy
  • Splash of Lager
  • Worcestershire Sauce
  • 1 tsp of Chipotle in Adobo
  • A few garlic cloves
  • Ground Cumin
  • Chilli Powder
  • Black Pepper
  • Chopped Coriander
  • Chopped Red Chillies

 

To make the pickled onions, marinate the following ingredients overnight and drain before serving:

  • 1 Red Onion sliced
  • Juice of 1 orange
    Splash of white wine vinegar
  • Pinch of sugar
  • Pinch of salt

 

To make the Mojo, combine the following ingredients:

  • Splash of Orange Juice
  • Splash of Lime Juice
  • Tablespoon chopped coriander
  • 1 clove garlic chopped
  • 1 tablespoon chopped green pepper
