The masterclass, on top of the actual tasting, will address some common misunderstanding around the various qualities and proveniences of salmon. We think is essential for consumers to understand what they are buying considering the lack of knowledge of the market. Indeed, we aim to clarify why some smoked salmon is more expensive than others and what does it mean sustainable farming. We’ll explain the basic difference between an organic salmon and a regular one, understanding what are the key factors of the product and the farms that marks the quality. Then, we’ll briefly point out what is the difference between wild and farmed salmon and how both of them impact the environment now and in the future.
After the theoretical part, we’ll introduce the visitors to our product, classifying the flavours, shades of smokiness and textures of the 4 different parts that identify our smoked salmon and philosophy. We’ll start to taste the very delicate neck going all through till the tail, where the flavour becomes very intense and texture particularly lean.

Learn the essentials of making silky smooth dark chocolate truffles in a hands-on workshop with MIA Co-founder Brett Beach. Participants will start by sampling pure MIA dark chocolate before getting involved in the simple steps of truffle making. Participants will then have the chance to make a few of their own chocolate truffles and adorn them with an inclusion of their choosing. During the workshop Brett will share some experiences and chocolate making insights from over six years living in Madagascar followed by a career journey in chocolate confectionery.
