What is your favourite dish on your own menu and why?
Our dry-aged beef; it has become a speciality of ours - there's an art in getting it right

What is your desert island dish?
Roast beef and yorkshire puddings

What is your favourite seasonal dish?
Venison in blackberry sauce

What drink would you pair with it?
A full-bodied red wine

What is your favourite restaurant in London and why?
Kerridge's Bar & Grill at the Corinthia Hotel. Big fan of Tom Kerridge generally and love the ambience and display of this venue

What is your favourite dish in London?
My wife and I recently sampled the "Mac Daddy" burger at Dirty Bones. Double brisket & dry aged steak, topped with pulled beef short rib, mac & cheese and espresso-spiked BBQ sauce

Who is your most hotly tipped young chef?
Elizabeth Haigh. She uses some of the lesser-known cuts which I wholly advocate

What is your favourite thing about Taste?
I really like the community feels of this festival - bringing people together through food
