What is your favourite dish on your own menu and why?
Lahmacun. It's crispy, meaty, fresh, zingy and everything you want in life.
What is your desert island dish?
What is your favourite seasonal dish?
Lamb and Loquat Kofte. We put it on at Oklava in spring. No one has heard of it, its delicious and surprises customers.
What drink would you pair with it?
Cabernet Franc, Arcadia Vineyard, Turkey
What is your favourite restaurant in London and why?
There are a few but Kiln always makes me very happy.
What is your favourite dish in London and why?
Stir fried greens at Kiln. So moreish!
