What is your favourite dish on your own menu and why?
My favourite dish in our menu is QISHAN hand-pulled noodles with pork in soup. This noodles is the traditional food of my home town, Shaanxi Province, and it is popular because of its delicious taste, sour and spicy. For Shaanxi people, the color matching of saozi noodles ingredients is especially important. The yellow egg, black fungus, red carrot, green garlic, white tofu and other materials are both good-looking and delicious.
What is your desert island dish?
I like my mother's sweet potato balls. So I added this healthy and yummy dessert to our restaurant menu.
What is your favourite seasonal dish?
Crisp-skinned chicken shaped as gourd. It is actually good for all season and especially for winter time. Crispy on the outside and tender on the inside, it's perfect to nourish your health.
What drink would you pair with it?
Chouju - it's a type of Chinese fermented alcoholic beverage brewed from glutinous rice. It is very thick and has a milky white color, which is sometimes compared to jade. It is also very good for cold winter.
What is your favourite restaurant in London and why?
Sabor, which is located in Central London near Piccadilly Circus tube station. Sabor is a special restaurant for me. I like the overall style of the restaurant and the chef of Sabor is a woman, just like me. The atmosphere of Sabor is very good; people will feel relaxed when they dine there. What makes it special to me is that I always sit at the counter. The chef is right in front of you and she can introduce the food to you and you can also watch her cooking for you. It is a pleasure for me to hear the clatter of pots and pans - it sounds like music and I like it very much.
What is your favourite dish in London and why?
London is a special place for food. All kind of food are booming here. I like all the delicious food.
Who is your most hotly tipped young chef?
Billy Wright, who was a runner-up in the BBC1 MasterChef and was diagnosed with papillary thyroid cancer. Now in recovery, he is raising money for Cancer Research UK with business partner and fellow MasterChef runner-up Jack Layer for a 24-hour charity supper club.
What is your favourite thing about Taste?
It is a great opportunity to meet people at Taste of London this year. I think the most interesting aspect is that people can try different types of food and cusine during the event.
