What is your favourite dish on your own menu and why?
I love slow cooking, allowing for the meat to be tender and soft and flavours so develop. I am making a South African classic Oxtail Potjie.
What is your favourite desert island dish?
Garlic, lemon grilled prawns with coconut rice and a Rum cocktail.
What is your favourite seasonal dish?
We do cook a lot of meat in Sa and during winter potjie are cooked on the coals low and slow so this is a very traditional dish. Lamb potjie is the most popular.
What drink would you pair with it?
I am cooking and pairing the Oxtail potjie with a Nederburg Pinotage red blend.
What is your favourite restaurant in London and why?
I am new to London and am still looking for my favourite restaurant.
What is your favourite dish in London and why?
Same as above but I do love Yorkshire pudding with gravy!
What is your favourite thing about Taste?
I adore the entire concept of Taste, I have attended annually in South Africa, been able to visit in Perth and London. Being able to enjoy and taste different dishes and learn about a locations restaurant offering all in one go is a foodie heaven.
