Iberian Katsu Sando: Original, iconic, unexpected.
What is your desert island dish?
Raw scallops or grilled fish.
What is your favourite seasonal dish?
Grilled peaches and kimchi.
What drink would you pair with it?
Kanpai FIZU Sparkling Sake.
What is your favourite restaurant in London and why?
Londrino. Even though it has been closed now for the last month I am still not over it. Excellent ingredients, especially fish and seafood, unexpected flavours, originality.
What is your favourite thing about Taste?
Getting to meet industry people and see what they are up to professionally.
