Harry Nikolau, Head Bartender, Rotunda 

Growing up in the vibrant city of Patras, Greece, Harry started his career in hospitality at Pasmal Cocktail bar before his admiration for the London bar scene led him to move to the city.

Now Head Bartender at Rotunda, Four Seasons Ten Trinity Square, Harry combines a love of classical bartending, which he describes as ‘being able to have a conversation with anyone, about anything’ and using innovative and experimental ingredients to create perfectly crafted drinks for his guests.

Fin Spiteri, Bar & Events Manager, Rochelle Canteen

Son of Melanie Arnold, Fin began his career in hospitality as Restaurant Manager at Quo Vadis with a short spell at Trullo in-between. He was swiftly appointed Club & Bar Manager at the world-renowned Dean Street private members club and played a vital role as Managing Partner of the Flat Iron project, now Flat Iron Square, Union Street. Finn has continuously supported and worked alongside his mother Melanie Arnold and Margot Henderson in their catering business, and most recently Rochelle Canteen, where he will assume the position of Bar & Events Manager in its newest home in the Institute of Contemporary Arts.

Book signing: Tom Aikens

Tom Aikens is one of the UK’s most acclaimed and inspirational British chefs, still holding the crown as the youngest British chef to be awarded two Michelin stars. He currently has three restaurants in the UK – Tom’s Kitchen in Chelsea, Canary Wharf and Birmingham’s Mailbox, and has written a number of cookery books.

Tom will be signing copies of his book ‘Easy’ on Friday 16th Nov at 13:30 and Saturday 17th Nov at 19:30.

Book signing: Ping Coombes

From being made redundant to winning MasterChef in the same year, Ping Coombes was propelled from a home cook into a ‘dream come true’ world of cooking. Her aim is to spread love for Malaysian food within the UK, showcasing its flavours to a wider audience.

Ping will be signing copies of her debut cookbook ‘MALAYSIA’ on Friday 16th Nov at 18:30

Masterclass: Atelier Salmon

The Cotswolds’ finest purveyors of smoked salmon will provide an interesting insight into smoked salmon and its production within the UK. In addition to a Q&A, visitors will learn about:

  • The varied flavours of smoked salmon
  • Practical slicing and trimming techniques
  • Smoked salmon in the UK and the difference between artisan and mass production
  • The secrets behind Atelier’s unique production process (never before shared!)
  • Smokehouse construction and engineering tips
  • Anything else you’d like answered via a quick Q&A

This masterclass will take place on Friday 16th Nov at 14:30 & 19:30; Saturday 17th Nov at 14:30 and 18:30 and Sunday 18th Nov at 14:30.  

Masterclass: Binary Botanic Ale Masterclass

Binary Botanical Ale is a new type of beer, using an infusion of organic hop leaves to give a prosecco-like flavour to a light refreshing beer. With half the calories and alcohol of wine, sugar free and vegan, binary is the perfect balance between delicious flavour and better for you.

In this masterclass, Binary Botanic Ale will teach you how cocktails can not only be easy, but low-calorie too! They’ll be demonstrating how to make a quick, easy festive cocktail and all-occasions cucumber and rosemary cocktail – both of which are under 100 calories!

This masterclass will take place on Saturday 17th Nov at 20:00 and Sunday 18th Nov at 13:30.

Masterclass: Wignac Cider & Blonde of St Tropez

European artisans Wignac and Blonde of St Tropez are joining forces to tell their story and educate visitors about their products and unique production methods. You’ll get to take part in a guided tasting session and learn how to create your own Wignac cider cocktail.

This masterclass will take place on Friday 16th Nov at 20:00.
