Farrington’s Mellow Yellow

Duncan Farrington, a fourth generation farmer from Northamptonshire, started looking into the fantastic health benefits associated with cold pressed rapeseed oil after returning home from University. Cold pressed rapeseed oil has half the saturated fat of olive oil, and has a healthy balance of omegas 3, 6 and 9. He soon became obsessed with not only the health aspect, but also the brilliant culinary properties of the oil: it has an incredibly high smoke point. In 2005, after numerous years of research, Duncan launched Farrington’s Mellow Yellow and became the UK’s first ‘seed-to-bottle’ producer of cold pressed rapeseed oil.

Grown, pressed and bottled on the farm in Northamptonshire, Farrington’s Mellow Yellow quickly grew in popularity and it wasn’t long before it was being sold nationally. Over time, Duncan’s wife Eli added a range of salad dressings, mayonnaise and infused oil to the Farrington’s Mellow Yellow family, all of which retain the homemade feel people had grown to love.

Today, Farrington’s Mellow Yellow has grown bigger than Duncan ever expected, but is still being produced in the same place, to the same simple process, with care and passion put into each and every bottle.

Farrington’s Mellow Yellow will be showcasing their full range of products at Taste of London Festive Edition this year. Their cold pressed rapeseed oil has half the saturated fat of olive oil and ten times the omega 3. It is great for high temperature cooking and has a subtle nutty flavour so can be used in a wide variety of dishes.

Using this oil, they create a range of three dressings, a chilli oil and two types of mayonnaise, all of which are additive and gluten-free. Classic Vinaigrette is the ultimate salad dressing, ready to complement any salad. Their Honey & Mustard Dressing is a match made in heaven that doubles up as a marinade as well as a salad dressing.

For those with a sweet tooth, their Balsamic Dressing is made with British apple balsamic for a deliciously fruit twist on the classic Italian dressing. Try the Chilli Oil to turn up the heat on pizzas or in your cooking. For fans of homemade mayonnaise, try their Classic Mayonnaise or Garlic Mayonnaise, delicious to dollop and wonderfully creamy.
