After working for a few years as sous chef, Soonthorn sought opportunities to further develop his own creativity in the UK. He began a run of kitchen positions at some of the most exciting Thai restaurants in the UK, working with some of its most accomplished chefs and very quickly rose to the position of head chef.
Describing himself as a ‘positive and self-motivated chef who loves the challenge of a fast-paced kitchen with a heavy emphasis on delivering quality food’, he immediately set his sights on the rarefied air of fine-dining.
His culinary repertoire flourished when he joined Mango Tree restaurant in 2007 as head chef, where he developed and refined his culinary techniques, elevating the cuisine to its current state. He continues to update the menu seasonally, reflecting his Thai origins and adding his own flare to the dishes.
