Shanti Bhushan, Executive Chef at Brigadiers

Shanti has extensive experience working across India and London perfecting both classic French and Indian cooking techniques during stints working in Michelin-starred Indian restaurants in London and most recently with Raymond Blanc for several years. He joined JKS Restaurants in May 2018 as Executive Chef of their latest opening, Brigadiers, an Indian barbecue and sports bar in the City of London.

Inspired by the army mess bars of India, where military regiments go to eat, drink and socialise, Brigadiers focuses on different methods of Indian barbecue with Shanti and his team utilising tandoors, charcoal grills, rotisseries, wood ovens and classic Indian smokers to create a menu of dishes that marry with the drinks offering at Brigadiers, which plays a central role at the restaurant.
