Olly Bird, Executive Chef at Zelman Meats

Executive Chef Olly is one of the longest standing members of the GCG team having been with the company just shy of a decade. He started at Goodman Mayfair and played a key role in opening second Goodman site in The City. Olly was offered the position of Head Chef there and has since stayed with the company, most recently in Zelman Meats where his input has been instrumental in the creation of the new menu in his role as Executive Chef.

Olly’s approach to cooking is intensely experimental and he has a passion for finding under-used and under-appreciated cuts of meat and showcasing them at their best.

The charcoal used at Zelman Meats is their own house blend and contributes to the expert cookery and flavour of the resulting meat, Olly has also been key in developing this Zelman Meats Charcoal.
