Federico Casali originates from Rome, Italy and actually started his career as an engineer but his passion for cooking and creating dishes soon took over. Federico has a profound love for all things cooking. He delights at using fresh quality ingredients to create traditional Italian cooking that has hints of influences from Scandanavia, Asia and many more.

Federico now has many years of experience under his belt and before Enoteca he honed his skills at restaurants like Symposium and Enoteca Super Tuscan. Federico’s method is to continually challenge himself and his palate by trying out new flavour and ingredient combinations, he begins his cooking by looking at a pure Italian inspiration and then adding other cultural influences which give him the chance to continuously improve the menu and his cooking techniques.
