Dean started his career at Lambert’s where he developed his love and respect for British and seasonal produce. Following this, he moved to Paternoster Chop House (D&D London), another British institution where he met Robin Gill and Dan Joines.
After a stage at The Ledbury, Dean joined Robin Gill at Sauterelle where they built a solid working relationship. After a year at Tom Aiken’s, Dean came on board for the opening of The Dairy as Head Chef.
Dean opened The Manor with Robin and Dan in 2014 as Head Chef where he was able to take autonomy of the menu from day one.
Dean’s passions lie in all things natural. He was instrumental in the introduction of the beehives and rooftop garden at The Dairy and he still maintains the bees.
Dean is also a keen urban gardener and has recently secured a derelict space on a council estate to grow vegetables and herbs and connect with the local community.
