Born to Chinese parents, Shing and Wai Ting grew up in Nottingham, UK, and were involved in hospitality from a young age, helping out at their parents’ Cantonese restaurants in the city. Shing moved to London when offered a place at the prestigious Slade Art School of Fine Art, where he met his now wife Erchen, while Wai Ting studied Clothing Design & Technology at Manchester University.
Erchen spent her childhood in the Taiwanese capital Taipei, before moving to the UK aged 14. Growing up, Erchen had a great love for Taiwanese food & ingredients, learning from her grandmother’s home cooking. She regularly travels back to her home country to research and learn as much as possible about Taiwan’s food & culture which has helped them perfect the art of making their now famous steamed BAO buns and ‘rice bowls’ served at the Soho and Fitzrovia restaurants.
With their wealth of creative and culinary experience, the entrepreneurial trio opened XU, a new Taiwanese restaurant in Soho this month, to critical acclaim. BAO and XU are backed by JKS Restaurants.
