With a programme of 30 minute workshops “The Skillery” presented by Flint and Flame is the place to get hands-on and discover the art of sushi rolling, brew your own Kombucha, try your hand at roti spinning, master your knife skills, learn about nose to tail eating and much more.

Kombucha masterclass with Gina Geoghegan

Master brewer and kombucha queen Gina Geoghegan will take you through the process of making Kombucha, step by step from tea to finished bottled deliciousness. You can take home a goodie bag at the end of your session. Kombucha is the future!

Lactic Fermentation – Sauerkraut and beyond with The Fermentarium

Simon Poffley, founder of the Fermentarium and co-author of Ferment, Pickle, Dry – Ancient Methods, Modern Meals, will guide you through the principles of lactic fermentation and teach you to make sauerkraut. You’ll also pick up information about other forms of lactic fermentation such as brine-fermented vegetables and kimchi, and discover the benefits of baking and fermenting at home.

“Using the whole bird” with the Southeast Butcher

Convenience shopping is a wonderful thing, we rush into our local supermarket to grab our weekly essentials and exit as quick as we can. But how convenient and cost effective is it really for you? Get back to basics with the nose to tail workshop with Southeast Butcher who will show you how to get the most of each cut from your everyday chicken.

Lyle Wheeler comes with years of experience working in the meat trade, from the Borough Market branch of Ginger Pig to new local butchers Flock and Herd in Peckham where he is responsible for sourcing new meat from livestock, developing new and delicious cured meats and nurturing relationships from farms to restaurants.

Pan Chai Sushi Master Class & Chi Kitchen Roti Canai Master Class

Under the watchful eyes of Chef Vira and Chef Chang, learn the skils to make roti canai and also Chi Kitchen’s wonderful California Rolls. You will be given exactly the same ingredients as the chefs and be able to experience how to make each dishes on your own, with expert guidance from these trained chefs!
