Lactic Fermentation – Sauerkraut and beyond with The Fermentarium
Simon Poffley, founder of the Fermentarium and co-author of Ferment, Pickle, Dry – Ancient Methods, Modern Meals, will guide you through the principles of lactic fermentation and teach you to make sauerkraut. You’ll also pick up information about other forms of lactic fermentation such as brine-fermented vegetables and kimchi, and discover the benefits of baking and fermenting at home.

Under the watchful eyes of Chef Vira and Chef Chang, learn the skils to make roti canai and also Chi Kitchen’s wonderful California Rolls. You will be given exactly the same ingredients as the chefs and be able to experience how to make each dishes on your own, with expert guidance from these trained chefs!
